The Japanese farmer and distiller of this essential oil shared some interesting facts about Yuzu, saying the Yuzu tree must mature to eighteen years before bearing fruit, and, because it only bears fruit every other year thereafter, true Yuzu is costly and in limited supply (rare). To shorten fruit bearing time, some farmers graft a young Yuzu plant onto another citrus tree. However, fruit from grafted trees result in poor flavor and aroma. True Yuzu fruit from a non-grafted tree is known in Japan as Misho Yuzu. In October Misho Yuzu fruit is green and by middle November it ripens golden yellow. Misho Yuzu is immediately recognizable by its bumpy surface. Grafted Yuzu has a smoother surface and ripens in summer. Misho Yuzu ripens in late fall. The most vibrant essential oil closest to the true aroma of fresh peels comes from golden yellow Misho Yuzu cold pressed fruit peels harvested in late Oct-Nov.
